healthy spinach lasagne with salmon WIAW

And again I am coming up with a food post! I hope you enjoy - this time I had a super yummy lasagne with spinach and salmon!


If you want to try this you just need to follow my recipe here:

  • cut 2 onions into small cubes
  • heat 1 table spoon of vegetable oil in a pan
  • add onions together with 400gr. of spinach (unfrozen is fine) and let steam for 5 minutes
  • in the meantime cut 160gr. of fresh smoked salmon slices into small squares
  • then add 300ml of vegetable brooth into the pan
  • open and add a tin of chunky tomatoes (400gr.) and the salmon into the pan
  • add salt, pepper and thyme
  • pre-heat the oven to 200°degrees celsius
  • prepare 400gr. of low fat cream cheese (buko/philadelphia) in a bowl and stirr together with 1 table spoon dill, a pinch salt & pepper, 1 tea spoon of lemon juice and a bit muscat
  • now start shifting into a gratin dish (21x32cm) start with spinach mass, then lasagne sheets (you´ll need 12 in total) and then the cheese mass. repeat 3 times.
  • add low fat grating cheese as much as you like (I had 150gr.)
  • put it in the oven for 25 minutes


It´s a little bit time consuming but it is so worth it! Spinach has a lot of good vitamins and minerals, also the salmon contains folate and omega-3 oils which are good for your heart and organs!

healthy broccoli soup WIAW

Here is my what I ate Wednesday!
Today I would like to share a recipe of a really easy and delicious broccoli soup.

 
The cooking is so simple and goes really quick. Here it goes for 2 persons as a dish or as a starter for 4 persons:

Put 500gr of broccoli in a pot, also deep-frozen broccoli is fine!
Add 300ml of freshly brewed vegetable broth and let it cook for 8mins.
To flavor use salt, white pepper and a bit of muscat.
Now puree everything to a fine soup with an immersion blender and finally stirr in 4 table spoons of crème fraîche. Et voilá!

As you can see I added some coûtons to my soup, as a change I would probably choose a whole grain roll for the next time and/or replace half the broccoli with spinach!

This dish is super healthy as broccoli and spinach contain a lot of calcium, iron and B-vitamins! Hope you enjoy experimenting, bon apétit! :)

Beauty Favourites October 2013

This month I am again a little bit late with my beauty favourite post which relates to the fact that we were on a weekend trip over the first days of this month! However, here it goes now with my favorite products of October!

I bought this product way back in France when I was working there. I kind of rediscovered it after my beloved stila eye liner went empty very fast :( The eye liner is soft at application, it doesn´t smear or smudge and stays in it´s place for a long time. I do also really like the natural looking, the wooden kind of 'pencil'. And because it´s so long it holds for years ;) definitvely a plus!


Clinique self sun face tinted lotion
I had slight issues with the self sun by Clinique because there are 2 different ones. The tint gel is a wash-off self tanner which I grabbed by accident and intended to use up til the end. But as the packing was still almost completely full I thought this makes no sense and ask at my local Clinique counter for help. They replaced the product right away with the face tinted lotion which is supposed to soak in and leave a tan for 1-3 days. Right after applying the slightly tinted lotion my skin is already tanned and I love it! I am using it constantly now every 2-3 days. The tan itself is a very warm nice tone and just gives me a little more comfort on my pale skin during winter time in a healthy way.

After a walk at the windy sea I thought I would do something good for my hair to smoothen it again. With the brilliant brunette my hair also was super shiny, smooth, straight and nourish and I have totally forgotten how lovely the brilliant brunette products smell!! :)



Glynt hydro vitamin cleansing shampoo
Once a week I am using a cleansing shampoo to get removed all rests from other products properly out of my hair. I really like that I can do kind of a re-start with all the products on my hair every week. Especially as my hair is fine and not too dry so any too much of a product would make it grease again after 1 day already. So the Glynt cleansing shampoo with a cleansing factor of 8 out of 10 is perfect for me!

weekend trip to Westerland

Over the last weekend and my birthday, my hubby and I went to our favourite german island - Sylt! We just love the nordic chic and the beautiful landscape there! Here are some pictures of our 4 days trip.

I love holidays at the sea side as this just calms me down and relaxes me so much! I really like being surrounded by beautiful landscape. And we loved the interior of the appartment we rented in Westerland, the beach house style was so inspiring. I pinned some more photos at my Pinterest wall (saniwegner). Also it was a very adequate way to turn one year older, now as I am over 30 it doesn´t hurt so much doing it that way... ;)
