If you want to try this you just need to follow my recipe here:
- cut 2 onions into small cubes
- heat 1 table spoon of vegetable oil in a pan
- add onions together with 400gr. of spinach (unfrozen is fine) and let steam for 5 minutes
- in the meantime cut 160gr. of fresh smoked salmon slices into small squares
- then add 300ml of vegetable brooth into the pan
- open and add a tin of chunky tomatoes (400gr.) and the salmon into the pan
- add salt, pepper and thyme
- pre-heat the oven to 200°degrees celsius
- prepare 400gr. of low fat cream cheese (buko/philadelphia) in a bowl and stirr together with 1 table spoon dill, a pinch salt & pepper, 1 tea spoon of lemon juice and a bit muscat
- now start shifting into a gratin dish (21x32cm) start with spinach mass, then lasagne sheets (you´ll need 12 in total) and then the cheese mass. repeat 3 times.
- add low fat grating cheese as much as you like (I had 150gr.)
- put it in the oven for 25 minutes
It´s a little bit time consuming but it is so worth it! Spinach has a lot of good vitamins and minerals, also the salmon contains folate and omega-3 oils which are good for your heart and organs!
